Sunday Brunch done right! Italian Gravy, eggs & bell pepper.
2 large onions, sliced
2 red bell peppers, cut into strips
1 yellow red pepper cut into strips
1/4 cup of olive oil
1 tbsp of thyme leaves, minced
2 tbsp parsley, chopped
1 jar of Classic Jersey Italian Gravy
Put it all together!
1. In a sautee pan, add the oil, onions and saute for about 5 minutes. Add the peppers and thyme and continue to sauté for another 7-10 min.
2. Add the tomato sauce, season with salt and pepper, reduce the heat to low and let cook for 15 minutes.
3. Make 4 wells with a back of spoon and break one egg in each well. Sprinkle salt and cover the pan with a lid. Cook on a very low heat for about 10 minutes or until the eggs are set.
4. Sprinkle with Parsley and serve.
