Creamy Lasagna Soup


  • 1 tbsp extra virgin olive oil
  • ½ white onion, diced
  • 1 tsp minced garlic
  • 1 tsp italian seasoning
  • 1, 24 oz jar Jersey Italian Sunday Dinner Gravy
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into bite size pieces
  • ¼ cup heavy cream
  • Ricotta cheese, to serve


  1. Heat a large pot over medium heat and add the oil. When the oil is hot, add the onion. Saute until mostly tender, about 5 minutes.
  2. Stir in the garlic and Italian seasoning and cook for another couple minutes.
  3. Stir in the Jersey gravy and broth and bring to a simmer. Once simmering, add the lasagna noodle pieces. Cover and cook for 12-15 minutes or until the pasta is tender. Stir in the heavy cream. If desired, add more broth for a thinner consistency.
  4. Serve warm with a dollop of ricotta cheese on top.
